This delicious heart-healthy potato salad is the perfect side dish for your next BBQ, picnic, or family get together!
Ingredients
- 2 pounds red potatoes quartered
- 2 tsp olive oil*
- 1/3 cup cider vinegar
- 2-1/2 tsp Sweetener (Stevia or Splenda)
- 3/4 tsp salt
- 1/4 tsp black pepper
- 1/2 cup onion finely chopped
- 1/4 cup fresh parsley finely chopped
- 1/2 cup Corazonas Lightly Salted Tortilla Chips crumbled
Instructions
- Combine olive oil, vinegar, sweetener, salt, and black pepper in a large bowl; stir well with a whisk. Add the potatoes and onion; toss gently to coat.
- Cover and let stand 1 hour, stirring occasionally.
- Add the parsley; toss gently. Sprinkle crumbled Corazonas Lightly Salted tortilla chips on top of potato salad and serve.
- *Using olive oil instead of mayonnaise gives this potato salad added heart-health benefits!
