  1. Combine olive oil, vinegar, sweetener, salt, and black pepper in a large bowl; stir well with a whisk. Add the potatoes and onion; toss gently to coat.
  2. Cover and let stand 1 hour, stirring occasionally.
  3. Add the parsley; toss gently. Sprinkle crumbled Corazonas Lightly Salted tortilla chips on top of potato salad and serve.
