These yummy fish tacos are the perfect meal for a warm summer night!
Ingredients
- 1 pound flaky white fish (mahi-mahi or cod) cut into 8 equal pieces
- 1/4 cup olive oil
- 1-1/2 tsp chili powder
- 1-1/2 tsp dried oregano
- 1/2 tsp ground cumin
- 1/4 cup cilantro chopped
- 1/2 medium red onion diced
- 1/2 cup cabbage shredded
- 8 ea fresh corn tortillas
- fresh salsa
- 1/2 cup non-fat plain yogurt can substitute light sour cream
- 2 small limes quartered
- 4 average radishes halved
- salt & pepper to taste
- Corazonas Tortilla Chips
Instructions
- Create a fish marinade by combining the olive oil, chili powder, oregano, cumin, salt, and pepper in a bowl and mix well.
- Place the fish on a dish and pour marinade over it, coating the fish on both sides. Allow to marinate for 20 minutes.
- While the fish is marinating, mix the yogurt (or sour cream) with a pinch of cilantro and salt and pepper to taste, to create a creamy taco sauce.
- Heat a nonstick pan over medium-high heat, and cook the fish for 4 minutes undisturbed, then turn over, and cook for another 2 minutes. Remove fish from pan, and place on plate to rest.
- Heat the tortillas in a microwave, by wrapping them in a damp paper towel and microwave on high for 45 seconds.
- Place 1 fish filet in the center of each tortilla, top with onions, cilantro, and cabbage. Garnish with lime wedges, radishes and salsa, and serve with Corazonas tortilla chips.
